Past Continuous обозначает длительное действие, происходившее в определённый момент, а Past Simple — завершённое событие. После глаголов восприятия see и hear используется Complex Object: object + bare infinitive для законченного действия или object + -ing для действия в процессе. После want используется конструкция want + object + to-infinitive.
