My Favourite Dish: Pasta Carbonara

Ingredients:

• 200g spaghetti
• 100g pancetta (or bacon), diced
• 2 large eggs
• 50g Pecorino Romano cheese, grated
• Black pepper, freshly ground
• Salt to taste

Instructions:

1. Cook the spaghetti in salted boiling water until al dente.
2. While the pasta is cooking, fry the pancetta in a pan until crispy.
3. In a bowl, whisk together the eggs, Pecorino Romano cheese, and a generous amount of black pepper.
4. Drain the spaghetti, reserving some of the pasta water.
5. Add the spaghetti to the pan with the pancetta.
6. Remove the pan from the heat and pour the egg mixture over the spaghetti.
7. Quickly toss everything together, adding a little pasta water if needed to create a creamy sauce.
8. Serve immediately, garnished with extra grated Pecorino Romano cheese and black pepper.
